Head to Settings → General to pick your base currency — this is simply the currency all your totals and comparisons will be shown in. You'll need at least two different currencies across your accounts before this becomes something you can actually change; if everything you own is in one currency, there's nothing to convert, so this stays locked to that currency automatically.
